This course will take you through identifying to preparing seven wild edible that can be found throughout North America and the world. This will be a comprehensive look at each of these plants and help you gain 100% confidence in identifying and incorporating them into your life. We will also discuss the high nutritional content of each plant and provide easy recipes you can try at home. 

Students will be able to identify up to 7 wild edible plants.
Identify up to seven wild edible plants, explain when and how to harvest each plant and how to prepare each plant.
Foraging is great fun but it also can add tremendous nutrition and disease fighting phytonutrients to your diet. We will discuss why foraging can be an essential part of staying healthy and teach you how to create easy recipes to make it even easier to incorporate these plants immediately into your life!
The dandelion is one of the most nutritious foods. I call it the multi vitamin of the outdoors. It comes packaged with all the carrier oils needed for your body to assimilate all those nutrients! All parts of the dandelion are edible and have great benefits. In this video you will learn to positively identify dandelion and learn how to harvest the root to make a great tasting dandelion root "coffee". 
Garlic Mustard
Garlic mustard is known mostly for its reputation as being an extremely invasive weed. In this course you will learn that it is the most nutritious food ever analyzed! Learn to identify this great tasting plant and incorporate it into a wide variety of recipes!
Bedstraw has an interesting background from being known as a weed that promoted weight loss to being used as a mattress filler. A fun and easy plant to collect, bedstraw also has the quality of being tasty too! You will learn how and when to harvest this fun plant to make a delicious beverage or a unique side dish. 
Nettle is found in nearly every woods, roadside and farmstead. Most people try to avoid the vicious stingers but I relish finding any patches of this high protein nutrient dense plant. You will find out the secret to carefully harvesting this easy to identify plant and quickly put it to use in the kitchen!
Curly Dock/Yellow Dock
Curly dock adds a wonderful lemony flavor to any dish and usually you can find it in your garden or somewhere nearby. You will learn how to spot these crinkled leaves and easily collect a plentiful supply to throw in soups or eggs. I like them best raw thrown in my salad!
Easily one of my favorite plants, this root is a work out to collect but the flavor and vast medicinal qualifies of this plant make the effort well worth while. You will learn how to identify how and when to dig up these roots and create a traditional Japanese side dish that is easy, fun and delicious!
Evening Primrose
Last but not least we have the common evening primrose, a beautiful plant with a root that reminds me of the spiciness of a radish but has the starch and practicality of a potato. In this video we will harvest several roots and create a mashed potato like dish that will get your family outside seeking out more of these easy to identify plants!

Shannon Francis has a Bachelor’s degree in Outdoor Education. She learned wilderness survival skills with legendary Park Ranger Art Sedlack in Glacial National Park in Montana. She worked for two summers in the Boundary Waters Wilderness Area as an outfitter and two summers as a naturalist for Governor Nelson State Park where she did plant identification seminars. After graduation she entered the Peace Corps where she developed the environmental education curriculum for grades 5-12 for the nation of Jamaica. After two years of service, she became the environmental sector trainer for Peace Corps Jamaica.

Shannon loves to test her outdoor skills in a variety of rugged environments and weather. Most recently she traveled to Mongolia where she learned to live off the land in the traditional Mongolian nomadic lifestyle, identifying wild edible plants and how to prepare them. 

Shannon has been an instructor for the Primitive Skills Gathering, an annual event located in Ashland, Wisconsin and BOW (Becoming an Outdoors Woman), an international organization dedicated to teaching women about the outdoors. She also teaches for the Recreation Departments of Franklin, Greenfield, Greendale and Milwaukee. She has a passion to teach both kids and adults how to thrive with little or no modern conveniences in an urban or outdoor setting.
